Once you have played around with the colors and found something that matches you, then it's time to think of style. As you can see from the picture the basic tunic is really... well basic, but there are many things you can customized to your liking.
We will start from the inside and work our way out. The inner most part of the this multi layered outfit is the inner tunic. From what we see in the movies there are quite a few to choose from.
Some are wearing a Madarin collar, some a turtle neck and some gi/kimono style overlaying. But only some are approvable!
This is what the RL standards say:
May be a full tunic or a false tunic (meaning a collar, neck portion and sleeves may be added to a shirt or t-shirt). Dickies or tunics/shirts with a Mandarin collar are allowed.
a. If the outer tunic is sleeveless, then an IT must be worn and must have long sleeves.
b. Blouses and standard store bought turtlenecks may be used, but will not be considered an inner tunic for the purposes of costume requirements.
Here are what would be approveable:
A quick note on the sleeves, many Jedi seen on screen have extra material that ruffles and bunches together at the wrist. This is NOT and requirement but up to your own taste. The Jedi we see with the kimono/gi style closure method seem all to have chosen to close is left over right, that is not a requirement either!
Here are a few links on tutorials on making a gi style inner tunic:
